"Litchi honey is floral and delicate — just like the trees it comes from," says Bijender, who has spent over 25 years with his bees in the orchards of Doon Valley. His methods are gentle, taught through KVIC’s beekeeping program: no sugar feeding, no boiling, just raw harvest and minimal filtration.

Mustard Honey – Sambhal, Uttar Pradesh | Partner Beekeeper: Ashok Joshi, 36
Ashok is one of the region’s first-generation male beekeepers. During the mustard bloom, her fields buzz with activity. His commitment to ethical bee feeding and off-season care has turned his into a local role model.
"Bees are sensitive. If you respect them, they give you the purest honey," he says with a smile.
